Nah there is ton of Manga out there with adult people already in the workforce
For example the works of Akiko Higashimura like Tokyo Tarareba Girls, she is one of my favorite Mangaka oat.
Then there is Paradise Kiss and Nodame Cantabile (this one is supposed to be really good).
Truth be told, im not that well versed in in Josei. Sometimes i flip through some Manga Magazines and thats how i know that there are a lot of those Manga that you are looking for. You have to look for them yourself.

It’s so wild fam they peak romantically and find their life soulmate freshman year and it’s treated like it’s completely normal

i don’t really like Attack on Titan tbh way too slow and melodramatic for me. only ever seen the first season tho. i’ll check Darker than Black out

Weirdly enough when I was a kid DBGT final episode. That was the end at the time with nothing else in sight. The music + the way it goes through showing Goku’s life got me 😪

Anime most (likely) are adaptations of series already poppin and high schoolers or young uns in general are the widest demograph of it, be it viewers or creators

It also a form of escape and I think sweet nostalgia factor has a lot of play too. Those are my perspective though
