yeah its them b****es. Been powering through most of the game with the bloodhound fang and switched recently to a powerstance curved bandit sword. By the time the 2nd gargoyle spawns, I usually have the 1st one with about half health or less. Might have to come later when im more beefed up

I think the more you understand souls games the more you improve in both aspects.
If you try to brute your way through everything youll eventually discover ways to make life easier, to get your damage up or you find the right weapon
If you only cheese through it you might eventually run into a wall that still leads to you learning how to get better at the mechanics.
No matter what you do you get better so pick your poison
I think the real quality is to enjoy the games and finally feel comfortable discovering the world and secrets on your own thats the real masterclass of souls games but thats just my opinion
