The pit is nice for killing time. Also have heard delta emerald is fun. It’s just ORAS but for emerald and in pixel art mode instead.

Any Drayano hack (need Aurora Crystal asap), Radical Red, and Elite Redux are probably my favorites. Pretty impressed with what they're doing with Elite Redux tbh.

Completely different type of story/set up. You explore a labyrinth island with different biomes, each biome has a “leader” you fight. Game is a lot more about survivability and exploration. Side quests and material gathering - no gyms, no evil team, no league. Tons of double battles, actually might only be double battles? Can’t remember if there’s any single battles maybe in wild encounters. New regional forms for some Pokémon, two new types, and every Pokémon has rebalanced stats making all of them viable. Think it’s only Pokémon up to gen 3 which is my favorite 3 eras lol.

The Drayano hacks are more or less "definitive" versions of the original games. BST, move, type, etc. changes all across the board. Definitely more difficult than the original games, but not too bad. I believe all of them have all Pokemon available to catch in that game's dex.
Radical Red is more of a challenge hack that takes place in Kanto using Fire Red as a base game. Similar to the above but much more difficult.
Elite Redux is relatively new. The main gimmick is that all Pokemon have 4 different abilities active at the same time, so you can probably imagine that getting pretty wacky lol. New moves, fakemons (tastefully done imo, usually new forms of existing mons). Lots of active development on it. It's on ver 2.5 rn and I think 2.6 should be coming out soonish? It is considered a challenge hack, but there is an easy mode.
There's a bit more to it all than what I said, so I recommend checking out the Pokecommunity threads on em.
The Drayano hacks are probably the safest bet in terms of getting into rom hacks. Basically just considerably better than the base games. Renegade Platinum, Blaze Black2/Volt White2 redux, Storm Silver/Sacred Gold (Aurora Crystal is the one he's been working on for awhile now).

If you like the gen 3 games a lot, you can check out Emerald Seaglass. Very cool looking game. Haven't played it myself but people love it.

Been a while since I played but I think I ran like half a sun team — Salazzle speed control deals with Bewear and some of the others, Camerupt walls a good chunk of his team too. Curse spam on something easily wallable and the camel runs riot
