I feel you but considering Saturn and the Gorosei's status in the story and how much they've been built up I honestly don't think there's anyone that would have realistically gone after him in that chapter that wouldn't have faced the same fate as Sanji

It makes sense that Luffy is spamming Gear 5 right now (fun is intrinsic to the form and there's no way he has complete control of the form...important to remember that this is a Zoan fruit) but I really hope eventually Luffy falls back on using haki more (had a large portion of his success against Kaido with advanced conqueror's in base and any of his gears besides 5 + Shanks is still out there) because the drawbacks on gear 5 are way too high for it to be something other than something quick like his fight with Lucci or a last resort and dude is already a MONSTER with any of his forms + haki
