cut one medium head into small florets, mix ½cup flour and ½cup water and toss the florets in that. roast em for 15min at 400f, flipping em halfway thru. while they cooking heat up your sauce on the stove, I do a splash of olive oil, rice vinegar, and a hefty amount of something spicy (I like Lao Gan Ma spicy chili oil) but don't let it simmer, just get it hot. After 15min toss the florets in that s*** and then roast for another 4-5min. eat up
@Noir forgot this part coz my wife handles it, but we eat em with a ranch style dip. she makes her own thing with plain unsweetened yogurt, lemon juice and herbs/spices

Eggplant for texture I get. I like it tho. As for beetroot, there's ways you can go about it but you wanna pair it with balsamic vinegar. You can grate it and toss that in balsamic (some people add equal parts grated carrots/julienne strips) or you can also cube the beetroot, roast it in olive oil, then toss the cubes in balsamic, and top it off with crumbling your favorite cheese in there. Bits of goat cheese usually complements, but feel free to use what you like and see what works for you

bell peppers, cucumbers, and tomatoes. My family in souther California grow oranges, avocados and a bunch of stuff I didn't even know you could do in your backyard
